Artisanal Cheese Guide is a very slick and engaging site jam packed with info from Maitre Fromager and author, Max McCalman and his team at Artisanal in NYC. Stylishly designed and thorough. Look for
concise descriptions of cheeses and cheese related topics like rennet and affinage. A great source for an extensive selection well tended artisanal cheese.
Cheeses of France is sorted by milk type. Very complete (well over a hundred cheeses!), well-designed and quick and easy to use. Good info on history, aging, season, flavor, region and wine pairing. Succinct and nice pictures. Very cool “how to cut your cheese”
Cheeses of Italy is a nice site showcasing cheeses (and other foods) of Italy. In-depth info including history, region, flavor profile and tons of recipes on Italian DOP cheeses.
Cheeses of Spain is a nicely done site with in-depth info on Spain’s 23 DOP and DO cheeses. Lots of links to the makers and a somewhat cumbersome but interesting look at Spain’s cheeses by region. 
Cheese and Wine Pairing is a very useable and comprehensive site matching a wide variety of cheeses with wines and vice versa. This site includes some fairly obscure wines but is good for the connoisseur.
