Port Glazed Figs & Crater Lake Blue
Serves: 4 | Cook Time: 10 minutes | Level: Easy
Ingredients:
2 tbsp. butter
12 fresh figs
3/4 tsp. cinnamon
½ c. Tawny Port
6 oz. Crater Lake Blue, cut into 12 wedges
Directions:
This stylish dessert couldn’t be simpler – just five minutes, start to finish. Use fresh figs from the farmers market and a hint of spice creates the perfect platform for rich and savory Crater Lake Blue.
Wash and gently dry figs. With a sharp knife, remove stem end. Cut an X shape from stem toward bottom of each fig, stopping just shy of the bottom. This creates a “pocket” for the cheese after cooking.
In a large skillet, heat butter over medium-high heat. When melted and sizzling, add figs. Toss gently to coat with butter. Add cinnamon and toss to coat evenly, cooking for an additional 1 minute.
Add Port and continue to cook until port is reduced to syrup consistency, about 1-2 minutes. Remove from heat.
Add a small wedge of blue cheese to the cross-hatch in each fig and drizzle with remaining port syrup. Serve warm.
