Savory Sausage and Chocolate Stout Cheddar Nacho Bites
Makes 35 | Cook Time: 35 minutes | Level: Medium
Ingredients:
½ lb. Sweet Italian Sausage (bulk or removed from casing)
¼ c. Red Bell Pepper, minced
pinch Cayenne Pepper (optional)
1 tbsp. Italian Parsley, minced, plus more for garnish
1 heaping tbsp. Sour Cream
2 c. Chocolate Stout Cheddar, shredded and divided (about 8 oz.)

Directions:
These fun and tasty make-ahead morsels are perfect for the “Big Game”. Upscale without being frou-frou and “beer guy” approved!
Preheat oven to 350 degrees.
In a large skillet, thoroughly cook sausage over medium heat. Break sausage into small chunks during cooking. When fully cooked, drain fat and return to heat.
Add bell pepper, cayenne (if desired) and parsley. Sauté for 1 minute.
Remove from heat. Add sour cream and mix to combine. Add 1 ½ c. shredded Chocolate Stout Cheddar and mix thoroughly.*
Place tortilla chips evenly on a foil lined baking sheet. Flat chips work best. Place 1 tsp. topping on each chip. Sprinkle with 1 tsp. shredded cheese.
Bake 5-6 minutes until cheese melts and is bubbly.
Serve immediately, garnished with additional parsley, if desired.
*Note: recipe can be made through this step and refrigerated until needed, up to 3 days.
