Basil Pesto Crostini with Chèvre
Makes 6 | Cook Time: 15 minutes | Level: Easy
Ingredients:
6 3/4" slices of Ciabatta
1/4 c. Olive Oil
2 cloves of garlic, sliced thinly
5 oz. Fresh Goat Cheese, more to taste*
1/3 c. Basil Pesto
Fresh Basil for topping
Directions:
This spectacular appetizer couldn't be easier and is perfect to stave off hunger as other foods are grilling. Vary the recipe using other pesto flavors, tapenade or chutney.
Preheat Grill to medium high.
In a small bowl, infuse olive oil with sliced garlic for 5 minutes.
Lightly brush each side of the ciabatta with flavored olive oil. Grill bread 2-3 minutes per side until gently toasted.
Remove from grill and spread with 1 scant tablespoon of goat cheese. Drizzle with Pesto and chopped fresh basil.
Note: Most goat cheese comes in 5 oz. logs, use more or less to your liking.
